HOMEMADE OREOThose famous American sandwich-cookies were born in 1912! This classic black and white cookie knows a huge variety of flavours so you can alter as you wish with mint, lemon, cinnamon.

Here is the recipe if you fancy making some. I have reduced the sugar content on the biscuit but trying to work on a less sugar loaded filling is a must.

100g butter (soft)
180g sugar
1 large egg
1/2 tspn Vanilla Extract
180g wheat flour
70g cocoa powder (non sugary one)
1tspn bicarbonate of soda
2 tspn baking powder
1/4 tspn salt

Mix flour, cocoa, bicarbonate, baking powder and salt together.

Whip the soft butter until creamy then add the sugar and whip until fluffy.
Add the egg and the vanilla extract and whip until well combined.
Gradually add the mix of dry ingredients while whipping until all are integrated.

Wrap three small balls of this dough (it will be quite soft) into cling film and keep in the fridge for an hour. 
Shape each ball into a cylinder (width at your fancy) and cut 3mm thick circle with a sharp knife.

PS: at this stage you can even freeze the cylinder for later use.

Place on a baking tray with baking powder and bake in the oven at 180C for 10 minutes.

For the filling you will need to whip 60g of butter with 180g of icing sugar, 1tspn of vanilla extract (or any other natural flavouring you fancy) and 1 tbspn of milk. Whip until nicely combined and pour in between each baked biscuits (once cold from baking).
